The Chef's innovative dishes are a direct reflection of the diversified cultures living in the islands; a rich mixture of traditions, lifestyles, and most importantly, people.

Utilizing the freshest of Hawaiian grown produce and the bounties of the Pacific Ocean result in the Chef's highly personal adaptation of the contemporary style of cooking found here in Hawaii today. The goal is to give diners a true slice of Hawaii by incorporating ingredients familiar to the Islands.

Chef Mavro Restaurant Honolulu is abuzz over the wine pairings and elegant cuisine of George Mavrothalassitis, the culinary wizard from Provence who turned La Mer (at the Halekulani) and Seasons (at the Four Seasons Resort Wailea) into temples of fine dining. He brought his award-winning signature dishes with him, and continues to prove his ingenuity with dazzling a la carte and prix-fixe menus.

His newest restaurant Cassis Honolulu will open this Spring 2007 for lunch, cocktails and dinner. "This restaurant is inspired by four places - Cassis, Paris, Alsace and Honolulu," says Chef Mavro, winner of the James Beard award.

Overlooking Honolulu Harbor, the 295-seat casual, yet sophisticated space includes a bar, and will feature such dishes as Grilled Dayboat Catch, Rotisserie Chicken with a plum wine sauce, an American Kobe Beef Bavette with shallot sauce and curried fries, and the classic Tarte Tatin flavored with Li Hing Mui.

"People have asked me for a long time to open a casual restaurant, where they can come and eat everyday, "Chef Mavro says. "Cassis Honolulu is just that."
